You can always wake us up for dim sum. Whatever time it is. And fortunately, making your own dim sum is not as difficult as it seems. You have to go to the toko for wonton wrappers and a steamer basket, but otherwise it’s peanuts. We made our own dim sum with shrimps and minced meat.


For about 18 pieces:

  • 150 grams of raw large shrimps
  • 250 grams of minced pork
  • 50 grams fresh coriander, finely chopped
  • 35 grams fresh ginger, grated
  • 3 cloves garlic, grated
  • 3 spring onions, finely chopped
  • 2 tablespoons sesame oil + extra
  • 1.5 tbsp rice vinegar
  • 1.5 tbsp soy sauce + extra (for dipping!)
  • 1 tablespoon cornstarch + 1 teaspoon
  • 1 teaspoon salt
  • 18 wonton wrappers
  • 18 frozen peas
  • Neutral oil, for greasing

Also needed:

  • Steam basket with baking paper

If you want to make it really easy on yourself, chop all the ingredients for the filling in a food processor and then mix them with the minced meat and the finely chopped shrimp.

For this recipe – and many other Asian recipes – it is really worth investing in good quality sesame oil. So not the cheapest bottle from the supermarket, but a completely different kind. Ask for it at the Toko or go for our favourite: the one from La Tourangelle . World of difference.

We recommend that you put the filling in the fridge for two hours first, so that the flavors can interact well. If you don’t have that time, no problem. go for it!

Make sure that the intestinal tracts of the shrimp are removed or do that for a while (that eats a lot better). Finely chop the prawns and mix in a large bowl with the minced meat and the other filling ingredients . Make sure everything is mixed well.

Now put the filling in the fridge for about 2 hours, so that the flavors can infuse, or get started right away with filling the dim sum.

Mix the remaining cornstarch with the water in a small bowl.

Take a wonton wrapper and place it on your palm. Brush the edge of the sheet with your fingertips with the cornstarch paste.

Place a heaping teaspoon of the filling in the center of the sheet. Make a well in your hand and push the dim sum into the well. Then the sheet folds around the filling. Leave the top open.

Smooth the top of the filling (with a teaspoon or with your finger) and press in a pea . Carefully place the dim sum side by side on a plate until steaming. Continue until all the filling is used up.

Fill a wok or pan with a layer of water and bring to the boil. Reduce the heat slightly until it comes to a gentle boil.

Cut a sheet of baking paper to size and place it on the bottom of the steamer basket . Place the steam basket on the wok or pan and place the dim sum on the baking paper in the basket. Make sure they don’t touch each other. Place the lid on the basket and let the dim sum steam for about 15 minutes.

Before serving, drizzle a little sesame oil over the dim sum and serve with some soy sauce for dipping.
