Beer sabayon with caramelized pear & speculoos

Sabayon is a dessert that makes a big impression. The Italians call it zabaglione (aha!), which sounds about as impressive as sabayon. Usually a splash of (dessert) wine goes through it. But did you know that you can also make beer sabayon?


For 6 people:

  • 4 egg yolks
  • 50 grams of granulated sugar
  • 50 ml brown beer (any brown beer you like)

For it:

  • 4 pears
  • 50 grams of butter
  • 50 grams of sugar
  • 3 tablespoons honey
  • 4 speculaas

This airy dessert consists of egg yolks, sugar and alcoholic drink. That is often wine, but if you go for a nice, brown beer, your sabayon will get a nice twist. And that beer just happens to go perfectly with the flavors of caramelized pear and speculoos. So good.

This is how you make this beer sabayon

Crumble the speculaas into a fine crumb, for example in a sealable bag that you can go over with a rolling pin.

Melt the butter in a small skillet and add the sugar and honey. Let it caramelize over a low heat and then add the pear pieces. Bake for about 8 minutes, until the pears are soft and caramelised.

Meanwhile, put a pan with a little water on the heat and bring to the boil. Lower the heat. Hang a bowl above it that does not touch the water.

Melt the sugar in another pan with a small layer of the beer over very low heat for a few minutes. Add the rest of the beer.

Place the egg yolks in the bowl over the pan of gently boiling water and heat them in a  bain marie  while continuing to beat with the whisk. Slowly add the beer syrup from the pan and continue beating until the sabayon is nice and thick. Pain in your muscles? If necessary, use a hand mixer.

Spoon the caramelized pear into a beer glass (or another nice glass or deep plate) and spoon the sabayon over it. Finish with the speculaas crumb.

Tip: do you want to make sabayon with the Cook Expert from Magimix?  Then put all the ingredients for the sabayon in the stainless steel bowl and click the lid on. Remove the cap and set the unit for 10 minutes, speed 4.68 degrees.
