For about 20 sandwiches:

Make the pesto first

This is best done in a mortar, but it can also be done in the food processor or a larger chopper. Crush the pine nuts, grate the garlic clove on top and add the chopped basil leaves. Grind until you have a green paste.

Slowly add the olive oil and keep stirring until the pesto is a homogeneous mixture. Then add the Parmesan cheese and salt and pepper to taste. Taste well to see if it is to your liking!

This is how you make these pesto sandwiches

Preheat the oven to 200 degrees.

Place the sheet of puff pastry in front of you with the long side facing you. Brush the entire piece of dough with the pesto (a spatula is great for this). Also in the corners. Sprinkle some extra Parmesan cheese on top to taste and roll the dough into a tree trunk. Start on the short side so you have a short roll.

Tip: put the roll in the freezer for 10 minutes, then you can cut it into slices more easily.

Prepare two baking trays and line them with baking paper. Cut the roll of dough into slices one centimeter wide. Unless you want bigger sandwiches of course.

Place them on the baking sheets with plenty of space in between. Beat an egg with a small splash of water and brush the pesto bread with the beaten egg. Place in the hot oven for about 15 minutes, until golden brown.
