Mexican meal salad with quinoa

For 2 people:

  • 180 grams quinoa
  • Red pepper
  • 1 small red onion
  • can of corn
  • Can of brown beans
  • 2 tomatoes
  • 1 clove of garlic
  • Bunch of coriander
  • 1 chili pepper
  • juice of 1 1/2 lime
  • 2 tablespoons olive oil
  • Salt and pepper
  • Optional: tortilla wraps and/or tortilla chips

The quinoa is cooked in 500 ml. boiling water until the water has completely evaporated. Meanwhile, cut the vegetables into small pieces. Rinse the beans in a sieve with water and drain along with the corn.

Place everything in a bowl and season with salt and pepper. Crush the garlic clove and add. Then add some of the lime juice along with the two tablespoons of olive oil. Taste and add more lime juice if needed.

Serve the salad in a tortilla wrap with crushed tortilla chips for a crunchy effect. Enjoy your dinner!
