Quick salad with chicken thighs, avocado & tomato

This quick salad is super easy, very tasty and not too heavy. Summer on a plate!

For 2 people:

  • Your favorite type of lettuce
  • 250 grams of organic chicken thigh fillets
  • 1 avocado
  • 10 cherry tomatoes
  • Caesar dressing ( homemade or purchased)
  • Pepper and salt

Wash your favorite type of lettuce and toss with the Caesar dressing (not too far in advance, otherwise the lettuce will become limp). Cut avocado into cubes and halve the cherry tomatoes. Mix this through the lettuce and season with salt and pepper.

Season the chicken thigh fillets with pepper & salt and fry them  in a frying pan in a little oil or butter until they are cooked and golden brown. Serve on the salad.
