This meal salad with salmon, quinoa, avocado & grapefruit is super fresh, healthy and deliciously filling. The perfect salad for a weeknight!

For 2 people:

  • 2 pieces of salmon or 1 large piece
  • 1 cup quinoa
  • 2 cups of water
  • 2 grapefruits
  • 2 ripe avocados
  • 2 handfuls (mixed) lettuce
  • 1 lime
  • 1 spring onion
  • pepper and salt

In a saucepan, boil 1 cup quinoa in 2 cups water over medium heat. Once all the water has been absorbed (after about 10-12 minutes), stir the quinoa well and remove the pan from the heat.

Peel the grapefruit and separate the segments (for example, as we do in this video). Also collect the juice. Cut the avocados into slices.

Make a dressing of (part of) the grapefruit juice, some lime juice and salt and pepper. Cut the spring onion into fine rings.

Fry the salmon on the skin in a hot pan with some olive oil until half cooked. It tastes best when the insides are still raw. Remove the salmon from the pan and add the sliced ​​spring onion and let it fry briefly.

Divide the lettuce on a plate, scoop the quinoa on top, and arrange the grapefruit and avocado segments on top. Finish with the baked salmon and spring onions. Spoon the dressing over it. Enjoy!
