For 1 person:

  • 1 large raw beetroot
  • ½ lemon
  • 30 grams of soft goat cheese
  • 2 tablespoons honey
  • Handful of fresh spinach
  • 3 sprigs of thyme
  • Salt and pepper

Peel the beetroot and cook whole for about 20 minutes, until cooked through. Let something cool. Stir the goat cheese with the juice of half a lemon.

Wash the spinach leaves if necessary and cut the beetroot into thin slices. You can now start building the salad: start with a slice of beetroot, spread some goat cheese on top and finish with a spinach leaf. Repeat until the entire tower is formed and finish with a slice of beetroot.

Decorate with some fresh thyme, salt, pepper and honey.
