This recipe is simple and perfect for a weekday: string bean salad with smoked mackerel on toast.
For 4 persons:
- 400 grams string beans
- 2 bunches of radishes
- 1 smoked mackerel
- 4 champions (or other square buns)
- 20 grams of chives
- 1 tablespoon horseradish
- 2 tablespoons mayonnaise
- 2 spring onions
Preheat your oven to 175 degrees and bring a pan of water to the boil. Cut the buns into slices. Wash the radishes, remove the carrot and green leaves. Then cut the radishes into quarters and finely chop the chives.
Wash the string beans and then cut into pieces. Cut off the ends of the spring onions and cut the stems into thin rings. Fillet the mackerel and remove the bones.
In an oven dish, mix the slices of bread with a good splash of olive oil. Then season with salt and pepper. Place the baking dish in the center of the preheated oven for 15 minutes.
Boil the string beans for 10 minutes, drain and store in a large bowl. Mix the string beans with the radish and horseradish. Mix the mackerel with the mayonnaise, the spring onions and season with pepper.
Divide the string bean salad between the plates and serve the fresh mackerel salad with the warm toast. Enjoy your dinner!
