Ice cream for breakfast: honey-yogurt popsicles with summer fruit

Must Try

What better way to get through sultry summer days than with a deliciously cooling ice cream? To keep your head cool, it is best to start with refreshing food in the morning. The solution: ice cream for breakfast! With this recipe for honey-yogurt ice cream with summer fruit from the cheerful blog Joylicious  you can start the day without feeling guilty.

For 8 ice creams:

  • 500 ml Greek yogurt with 0% fat
  • 120 ml raw honey
  • 175 grams mixed small fruit (e.g. blueberries, blackberries, raspberries, strawberries)
  • ice cream molds

Mix the yogurt and honey in a large bowl. Add the mixed fruit and stir gently. Pour the mixture into a measuring cup with a spout so that you can easily pour it into the ice cream molds and place in the freezer.

Do you want the ice creams to look very nice for a party, for example? Make a piping bag from a sturdy freezer bag with the corner cut off. Let the ice cream harden in the freezer for at least 3 hours, preferably overnight.

In the morning, remove the popsicle molds from the freezer and let them thaw for three to five minutes, this will make it easier to remove from the molds.

Tip: do you have some of the yogurt mixture left? Put it in the blender and make a delicious smoothie!
