For 9 small pancakes (enough for 1-2 people)

  • 1 ripe banana
  • 2 medium eggs
  • 1/2 teaspoon baking soda
  • 2-3 tablespoons cottage cheese (can also be yogurt)
  • 1-2 tablespoons maple syrup
  • 8 strawberries
  • Coconut fat for frying

Squeeze the banana into the peel so that it is already largely ‘mashed’. Make sure that the peel does not pop open. Mash further in a bowl and beat the eggs until you have a smooth mixture.

Also add the cottage cheese and baking soda and mix well. Now heat a large frying pan over medium heat with a spoonful of coconut oil. Make sure the pan does not get too hot.

Scoop the batter into the pan in portions with a ladle. Bake them like regular pancakes and when the top starts to bubble it’s time to flip them. Fry briefly on the other side and continue with the rest of the batter.

Meanwhile, cut the strawberries into quarters. Serve the pancakes with the maple syrup and strawberries.
