Delicious for breakfast or just as a snack: these apple pancakes  from  Renée Kemps ‘ blog  are a hit with everyone! 

For 24 pancakes:

  • 350 flower
  • 2 tablespoons baking powder
  • 3 tablespoons dark brown sugar
  • 1 lemon, zest and juice
  • Pinch of salt
  • 2 large eggs, split
  • 4 tablespoons soft butter
  • 500 ml milk
  • 1 tablespoon vanilla extract
  • 2 apples
  • 1 tablespoon butter
  • 1 tablespoon cinnamon
  • Powdered sugar
  • maple syrup

Preheat your oven to 50 degrees Celsius. Peel and cut the apples into thin slices. Heat a frying pan and fry the apples with the butter and cinnamon until they are soft.

Mix flour, salt, baking powder, sugar and lemon zest together. Add the egg yolks, milk, butter, vanilla and lemon juice.
Beat the egg whites in a clean bowl until firm. Add this carefully (!) to your mixture.

Heat a frying pan. Pour about 60 milliliters of the batter into the pan and press in three apple wedges. Bake each side of your pancake until golden brown and store the baked pancakes in the oven in the meantime.

Place four pancakes on top of each other. Put some apple on top, cover with powdered sugar and pour over some maple syrup.
