These mini cakes of filo dough are fun to hand out or at the rice table



 Place a slightly damp tea towel on the filo sheets to prevent them from drying out. Bring a pan of water to a boil. Add the chicken breast and cook for about 15 minutes. Heat the oven to 200 degrees. Meanwhile, chop the bell pepper into cubes and fry them in a pan with a little oil. Add the bean sprouts and cashew nuts and fry for a further 3 minutes. Beat the eggs with the soy sauce. Remove the chicken from the pan and pull apart with a fork. Mix the chicken with the vegetables.

 Cut the pile of filo dough into quarters with a sharp knife. Spread 1 sheet with liquid butter and place a second sheet in the opposite direction to form a kind of star. Repeat this with all the sheets so that you have 10. Grease the muffin tin and press a star of filo dough into each cavity. Fill them with the vegetables and chicken. Pour over a little of the egg mixture. Fold the tips of the ‘star’ over the filling and also spread the top with a little butter. Bake them in the oven for 20 minutes until golden brown and crispy. Delicious with some chili sauce.
