Ingredients

8-10 pieces

250 gr flour
250 gr Alpro Mild & Creamy vanilla
1 sachet of baking powder a 16 grams
2 eggs
2 tbsp sugar
pinch of salt
120 g dried cranberries
2 tbsp Alpro Soy drink light or original
Powdered sugar to sprinkle

Preparation

Preheat the oven to 180 degrees. Soak the dried cranberries in warm water for about 15 minutes. Meanwhile, beat the eggs and the Alpro Mild & Creamy with a fork. Mix the flour, baking powder, sugar and salt together.

Add the egg mixture to the flour mixture and mix with a mixer with dough hooks to a sticky batter. Drain the cranberries well, pat them dry and mix them into the batter. Line a baking tray with baking paper. Wet your hands with some water and make nice heaps of the batter on the baking sheet.

Place the rolls in the oven for 20 minutes and then cover them with Alpro Soya drink light or original and put them back in the oven for another 5 minutes. Let them cool slightly and sprinkle with powdered sugar. The sandwiches have a sweet taste and are best served with a little jam or vegetable low-fat margarine.
Tips:
– Replace the cranberries with raisins or nuts
– In the recipe I used Alpro Mild & Creamy vanilla flavor but you can of course also use natural or strawberry/rhubarb.
– Store the sandwiches in a sealed plastic bag
