My panzanella recipe with pieces of fresh cucumber and mozzarella is ideal for a hot summer day. To complete the dish I have fried a steak with it and marinated in a tasty marinade of garlic and herbs. You can also use this BAK & BBQ marinade from MAGGI for chicken breast, shrimp or a piece of fish.

Tip: are you planning a barbecue? Serve the panzanella in a large bowl and cook the marinated steak on the barbecue.

Recipe panzanella with marinated steak

2 KIDS

Ingredients:

1 cucumber, diced
1 bag of mini mozzarella balls or 150 gr
1 red onion, cut in half rings
Handful of fresh basil
ciabatta bread
250 g cherry tomatoes, halved
2 yellow roasted bell peppers from a jar, chopped
1 tablespoon balsamic vinegar
1 bag MAGGI Bake & BBQ marinade garlic & herbs
60 ml + 3 tablespoons olive oil
450 g steak (3 to 4 pieces)

Preparation:

Mix the MAGGI Bake & BBQ marinade with 60 ml olive oil and add the steak to this and make sure it is well covered with the marinade. Let marinate for at least 20 minutes.
Meanwhile, cut the ciabatta bread into cubes and fry it in a pan without butter or oil for a few minutes until crispy.

Mix the cucumber, cherry tomatoes, bell pepper and red onion together in a large bowl. Add the crispy baked cubes of bread together with 3 tablespoons of olive oil and 1 tablespoon of balsamic vinegar. Finally, fold in the mozzarella balls and basil leaves.

Heat a frying pan and sear the marinated steak on both sides over high heat. Let the steak cook for another 2 to 3 minutes on low heat. If you want your steak to be a little more done, leave it in the pan for 2 minutes longer. Serve the panzanella with the fried steak.
