Preheat the oven to 180 degrees.

Cut the slices of cheese to the same height as the slits of the bread. Put the slices of cheese between the bread.
Tear the mozzarella into small pieces and divide between the bread as well. Chop the onion finely and divide between the indentations along with some parsley.
Place the filled shortbread on a baking tray with baking paper or in an oven dish and put in the oven for about 15 minutes until the cheese has melted nicely.
Serve directly on the table on a serving board, so everyone can pull off tufts of bread.
Tips: Also add pieces of dried tomato, Parma ham and/or olives.
Make sure your herb butter is at room temperature. If necessary, place it near your oven so that it heats up faster.
