Recently I told you that I am discovering canned fish. And I don’t just do that together with my Insiders who, just like me, get to work with Princes tuna . This time I have another delicious and easy recipe for you and many other tasty ideas with tuna.

Last time I made a pasta dish with tuna and broccoli. This time a slightly lighter meal with a Mexican twist, namely quesadillas. These are tortilla wraps from the pan with a filling in between. A kind of sandwich 2.0 so to speak :). I thought it was a really successful experiment, the lime makes it nice and fresh and the cheese creamy. And they are delicious as a quick meal or for lunch.

Recipe quesadillas with tuna



4 tortilla wraps (medium sized)
1 avocado
75 gr cheese
1 can of Princes tuna in sunflower oil
1 lime
1 small can of corn
Pinch of cayenne pepper

Sour cream
2 diced tomatoes
Fresh parsley


Drain the corn and the tuna. Cut the avocado in half and remove the pit and skin. Cut the flesh into cubes. Place a tortilla wrap in a dry frying pan and place over low heat. Divide ¼ part of the corn, avocado pieces and tuna over one half of the tortilla. Sprinkle with a pinch of cayenne pepper and drizzle over some lime juice.

Sprinkle generously with some cheese. Fold the other half of the wrap over the filling. Increase the heat slightly and bake for about 2 minutes until the wrap is golden brown on the bottom and slightly crispy. Then turn it over and brown the other side as well. Remove them from the pan and keep warm under a piece of aluminum foil or lid. Also bake the other quesadillas. Serve them with a topping of sour cream, diced tomatoes and some chopped parsley.

Easily reheat the quesadillas in the pan or in the oven for a few minutes.
You can also make them in a grill iron instead of in the pan.
