Delicious healthy quinoa salad with roasted pumpkin, eggplant, pecan nuts and slices of grilled cheese


275 g quinoa
1 aubergine
1 butternut squash
1 tbsp olive oil
Black pepper and salt
100 g pecan nuts, unsalted
½ vegetable stock cube
75 g lamb’s lettuce
300 gr haloumi cheese (available in a Turkish shop and can also be replaced with tofu)
1 tbsp olive oil
1 tbsp lemon juice
1 tsp thyme
Salt and pepper
Pinch of ground cumin
2 tbsp finely chopped fresh coriander
1 tbsp olive oil
1 tbsp lemon juice
1 clove garlic, crushed


Cut the haloimi cheese into slices and place them in a bowl. Stir together 1 tbsp olive oil, 1 tbsp lemon juice, thyme and a pinch of salt and pepper. Pour the mixture over the cheese and let the cheese marinate in the refrigerator, covered. Preheat the oven to 180 degrees. Peel the butternut squash and remove the seeds and threads. Cut the rest into cubes and put them in a baking dish. Drizzle with a little olive oil and sprinkle with black pepper and salt. Place the dish in the oven for 30 minutes. Meanwhile, cut the aubergine into cubes and after 15 minutes in the oven toss them through the pumpkin.

Rinse the quinoa well in a fine sieve. Cook the quinoa as directed on the package. Add half the stock cube while cooking. Remove the grilled vegetables from the oven and toss them through the cooked quinoa. Turn off the heat and put the lid on the pan and let it simmer for a while.

Heat a grill pan with a little olive oil and grill the marinated cheese for a few minutes on both sides until nice grill marks appear. Make sure that the cheese does not stick to the pan. Mix all the dressing ingredients together. Stir the pecans, dressing and lamb’s lettuce through the quinoa. Serve the quinoa salad lukewarm with the grilled cheese.
Also delicious with pieces of fresh goat cheese instead of the haloumi cheese
