Easy pasta recipe with chicken, pine nuts and a creamy grilled pepper sauce


400 g pasta
150 ml vegetable or chicken stock
400 g chicken, diced
100 ml cooking cream
1 jar grilled red peppers a 300 g
4 tbsp pine nuts, toasted
A few sprigs of fresh parsley
A knob of butter


Drain the grilled peppers and cut them into small pieces. Heat a knob of butter in the pan and add ¾ of the peppers and fry for 5 minutes. Place a pan with water on the stove and cook the pasta until tender. Meanwhile, brown the chicken pieces in a frying pan. Add the stock to the fried pepper pieces and bring to a gentle boil. Turn off the heat and mash the peppers with a stick blender.

Return to the heat and add the cooking cream while stirring. Let the sauce thicken for a few more minutes. Also add the other ¼ part of the peppers and the chicken pieces to the sauce. Finish the sauce with some finely chopped parsley and a little salt and pepper. Stir the sauce into the pasta or serve it separately on top of the pasta and sprinkle with pine nuts.
