Preheat the oven to 200 degrees. Place the slices in the oven for 10 minutes until crisp. Brush 1 side of the rib chops with the honey mustard. Crumble the bread and sprinkle the meat with the breadcrumbs.
Mix the potatoes, onions and olive oil in a baking dish. Sprinkle with salt and pepper and place the meat on top and put in the oven for about 40 minutes. Delicious with a fresh salad.
