Cheese onion quiche

Must Try

Savory vegetarian pie with red onion, thyme and spicy cheese

Ingredients

4 medium red onions
2 normal onions (or about 12 fresh cocktail onions)
1 garlic clove
4 eggs
200 ml heavy cream
A few sprigs of fresh thyme
Salt and pepper
125 g Gruyere cheese (or other spicy cheese), grated
1 tbsp butter
2 tbsp bread crumbs
dough:
130 gr flour
60 gr cold butter, cubed
1 small egg
1 tbsp cold water
Pinch of salt
materials
Quiche form or spring form or about 22 cm in diameter

Preparation

Start making the dough: Mix the flour with the salt and gently knead in the butter with your fingers until a crumbly dough forms. Add the egg and water and knead until you have a smooth dough. If the dough is still very dry you can add a little water and if it is very wet a little flour. Wrap the ball in foil and put it in the fridge for half an hour.

Heat the oven to 200 degrees. Meanwhile, make the filling of the quiche. Chop the onions into rings and the garlic into pieces. Strip some thyme from the sprigs. Heat a little butter in a pan and fry the onions, thyme and garlic for about 10 minutes. Beat the cream, eggs, pepper and salt in a bowl and stir in the cheese. Grease a springform pan or quiche pan with a little butter and sprinkle with breadcrumbs to prevent the crust from sticking. Roll out the dough on a floured work surface and then line the baking pan.

If you find it convenient, you can also place the ball of dough in the baking pan and push it apart with your fingers until everything is covered. Poke some holes in the bottom and sprinkle with a little breadcrumbs. Divide the onions over it and then pour the egg mixture over it. Place a sprig of thyme on top and put the quiche tin in the oven for about 35 minutes. Check with a skewer whether the quiche is well cooked inside. Nice with some salad.
