Summer pasta salad with fried chicken, pointed pepper and goat cheese served in a melon


150 g pasta
1 small cantaloupe melon
1 pointed pepper
40 gr lamb’s lettuce
1 large chicken breast of 250 gr
50 gr goat cheese
handful of fresh basil leaves
oil for frying
2 tablespoons olive oil
1 teaspoon mustard
1 tablespoon honey


If you want to use the melon to serve the salad, first cut it in half and remove the seeds with a spoon. Then cut out the flesh with a knife. Bring a pan of water with a pinch of salt to the boil and cook the pasta for about 10 minutes. Drain the pasta and rinse with cold water. Sprinkle the chicken with some pepper, salt and paprika and fry it in a pan with a little oil until nicely browned and cooked through, this takes about 8 minutes. Cut the melon and the pointed pepper into pieces. Mix the dressing ingredients together. Toss the lettuce, bell pepper, melon and dressing together. Cut the chicken into pieces and toss with the pasta through the salad. Serve the salad in the melon or in a bowl and divide the basil and goat cheese over it. This salad is delicious both warm and cold.
