Soba noodles with bok choy

Must Try

Oriental wok meal with tofu, soba noodles and pak choi and a fresh touch of lime

1 bok choy or 2 baby bok choy
375 g tofu
180 gr soba noodles
200 gr mushrooms
1 lime
120 g radishes, sliced
1 tbsp sesame seeds
1 tablespoon wok oil
3 tablespoons teriyaki wok sauce, eg from Kikkoman

Bring a pan of water to the boil and cook the soba noodles (4 minutes). Then drain and rinse with cold water. Drain the tofu well, cut into cubes and pat it dry with some kitchen paper. Heat the wok oil in a wok over high heat and fry the tofu on all sides for 3 minutes.

Add the mushrooms and fry for a few minutes. Cut the pak choi into pieces and fry for 2 minutes until it starts to shrink. Toss the noodles with the vegetables and tofu, meanwhile add the teriyaki sauce and squeeze the lime over the pan. Heat through for 1 minute and then fold in the radishes and sprinkle with sesame seeds.
Tip: I used 1 large piece of tofu, but sometimes there are also tofu wok pieces in the store that you can use in this recipe.
