Beautiful and tasty salmon recipe with bacon and homemade dill pesto for a (Christmas) dinner
Ingredients
4 nice pieces of salmon of about 150 gr each.
150 g bacon (12 to 16 slices)
1 lemon
Pepper and salt
dill pesto:
20 gr fresh dill
40 gr parmesan cheese
50 ml olive oil
30 gr pine nuts + optional to garnish
Preparation
Preheat the oven to 180 degrees. Place 3 to 4 slices of bacon slightly overlapping next to each other on a cutting board. Cut the lemon into slices and halve. Place 2 lemon slices on the bacon and place a piece of salmon on top. Wrap the bacon upwards around the salmon. Place the parcels with the lemon on top on a baking tray lined with baking paper. Sprinkle with a little salt and pepper. Place the salmon in the oven for 10 to 12 minutes.






Meanwhile, make the dill pesto: Place the dill, Parmesan cheese and pine nuts in a food processor and grind until fine. Gradually add the olive oil until you have a smooth pesto.






Remove the salmon fillet from the oven and serve on a plate. Divide some of the dill pesto over it and sprinkle with some pine nuts if desired. Delicious with potatoes and broccoli or a salad.
