 Heat the oven to 200 degrees. Chop the red onion and fry it together with the minced meat. Cut the peppers into cubes and fry them briefly with the minced meat. Add the finely chopped leek and fry for 1 minute more until it starts to shrink. Stir the tomato puree, paprika, Italian herbs and a good pinch of salt and pepper into the minced meat mixture.

 Place all this in a baking dish and stir in the egg. Arrange the slices of bread on top of the minced meat in an overlapping manner and drizzle with a little olive oil. Sprinkle the casserole with cheese and put in the oven for about 12 minutes until the bread is nice and crispy and the cheese has melted. Turn on the grill for the last 2 minutes if necessary.
