400 g diced tomatoes from a pack or can
1 red onion
1 bell pepper

1 zucchini

You can use ready-made potato slices or, like me, pre-cook waxy potatoes in their skins for 10 minutes and then cut into thin slices.
Preheat the oven to 180 degrees. Chop the onion and finely chop the garlic. Heat the oil in a pan and fry the red onion for 2 minutes. Add the minced meat and brown it. Then add the garlic and cook for a few more minutes over medium heat.

Remove the stem and seeds from the bell pepper and cut into cubes. Cut half of the zucchini into cubes and the other half into slices. Add the pieces of bell pepper and the cubes of zucchini to the minced meat and fry for a further 2 minutes. Season with oregano and a generous pinch of salt and pepper. Add the diced tomatoes and let it simmer for 10 minutes to allow the sauce to thicken.

Meanwhile, grease a baking dish with a little oil and divide half of the potato slices over the bottom, sprinkle with a little salt and pepper. Spoon the meat mixture onto the potato slices. Cut the mozzarella into thin slices and spread over the minced meat. Cover the casserole with a layer of potato slices with zucchini slices, which you put in between roof tiles. Sprinkle the casserole with the grated cheese and place in the oven for 30 minutes.
