500 g potatoes (boiling in wedges)
splash of oil
2 cloves of garlic
pepper and salt
4 pork fillet steaks
6 tablespoons of panko
1 tablespoon honey
(fresh) thyme
1 teaspoon mustard
½ tablespoon lemon juice


Heat the oven to 200 degrees. Grease an oven dish with a little oil. Divide the potato wedges in it. Mix a dash of oil with 2 crushed or finely chopped garlic. Sprinkle the potatoes with some salt and pepper and divide the garlic oil over them. Place the baking dish in the oven for 20 minutes.

Heat a little butter in a pan. Bake the pork fillets for 4 to 5 minutes. In a small bowl, whisk together the honey, lemon juice, a dash of oil, thyme and mustard. Then fold in the panko. Remove the potatoes from the oven and place the pork fillets on top. Spread some of the panko mixture on top. Place the baking dish in the oven for another 15 minutes until the panko is crispy. Delicious with, for example, beans or a salad.
For the photo I had put 3 pieces of meat in the oven dish instead of 4 because otherwise you would not see the potatoes properly.
