Ingredients

500 gr potatoes (flour)
200 g packet of choi
1 small outing
1 red pepper
1 clove of garlic
75 ml coconut milk
125 gr chestnut mushrooms
75 gr bean sprouts
2 tablespoons teriyaki sauce
Handful of cashew nuts
oil for frying

Preparation

Boil the potatoes for about 15 to 20 minutes. Meanwhile, chop the onion and garlic and fry in the oil. Finely chop half of the red pepper and fry for a while. Add the mushrooms and fry for 5 minutes. Add the teriyaki sauce. Then add the pak choi and bean sprouts and fry for 2 minutes until they start to shrink slightly.

Drain the potatoes and mash them together with the coconut milk and a good pinch of salt and pepper. Stir in the vegetables briefly. Serve the oriental stew with some cashew nuts. Cut the rest of the red pepper into rings and serve on the stew or omit this if you don’t like spicy. This stew is also delicious with a piece of meat or fish.
