Quiche with peas and goat cheese

A well-filled savory pie of puff pastry with peas, bacon and goat cheese.




 Preheat the oven to 200 degrees. Finely chop the onion and add to a pan with a little bit of oil or butter. Add the (frozen) peas and fry for 2 minutes. Cut the bacon into pieces and add to the peas and fry for a few minutes. Grease a round baking tin or quiche tin with some butter and line with the puff pastry. Press the seams together well.

 Poke some holes in the bottom and sprinkle with a little breadcrumbs, this will absorb the moisture. Beat the eggs with a pinch of pepper, salt, thyme and milk. Spread the pea mixture over the bottom of the quiche tin. Cut the tomatoes in half and add as well. Crumble the goat cheese over it. Pour over the egg mixture and put the quiche in the oven for about 45 minutes until cooked.

 For a vegetarian version, omit the bacon.
