Preparation

 If you are using fresh spinach, fry it in a pan until it has wilted. Drain in a colander and squeeze out most of the moisture. Let frozen spinach thaw and drain well.

 Heat the oven to 200 degrees. Boil the potato wedges for 5 minutes in a pan of water or in the microwave. Fry the chopped onion in a little oil. Add the spinach and fry briefly. Stir in the ham cubes. Season the mixture with salt and pepper. Beat the eggs with the crème frache and a dash of milk in a bowl. Season to taste with salt, pepper and also a pinch of paprika.

 Grease a large baking dish and divide half of the potatoes over the bottom. Spoon the spinach mixture on top and sprinkle with some cheese. Cover with the other half of the potato slices. Pour over the egg mixture and sprinkle with salt and pepper. Bake it in the oven for about 40 minutes. If necessary, turn on the grill for a few minutes for an extra crispy and brown crust.
