 Chop the onion and cut the ginger (peeled) into small pieces. Fry these in a (wok) pan. Add the pot of curry paste and 50 ml of water and fry for a while. Then add the chicken cubes and let it cook in the sauce for 5 minutes. Then add the diced tomatoes and coconut milk. Add the potatoes and let it cook for about 25 minutes until the potatoes are soft (but still have a bit of a bite). Finally add the spinach and let it want.

 Tips: pre-cook the potatoes for 10 minutes before adding them to the sauce. This way they don’t have to cook for as long and the dish is ready sooner, but use a little less liquid. Also try another curry such as madras or tikka masala.
