Fresh vegetarian couscous salad with mint, peach and falafel balls



 Prepare the couscous according to the package and add half the stock cube to the water. Bake the falafel. Cut the cucumber into slices and the peaches into wedges. Halve the avocado and remove the skin and pit and cut the flesh into pieces and add a few drops of lemon juice to prevent discolouration.

 Finely chop the mint. Stir the cucumber and peach into the couscous along with the mint. And finally the avocado. Serve the couscous with falafel balls, feta and possibly some extra mint.

 Tip: suffer from lumps in the couscous? Then stir a small dash of oil through the couscous before it is cooked. This couscous salad is delicious both warm and cold.
