 Beat the remaining 4 eggs with the quark. Season the mixture with salt, pepper and the Italian herbs. Add the garlic cloves. Drain the spinach well and press out the moisture with a spoon in a colander. Stir the spinach into the egg mixture. Pour the mixture into the baking pan. Divide the mozzarella pieces over it and some halved tomatoes. Bake the quiche for 45 minutes. The filling rises a little but also sinks in again.
