Sweet potato gnocchi with spinach

Delicious orange gnocchi made from sweet potato in a creamy spinach sauce. Make the gnocchi yourself with my basic recipe.



Prepare the gnocchi as in this basic recipe.
Bring a pan of water to the boil and cook the gnocchi 6 to 8 at a time. The gnocchi is done when it floats to the top.
Heat a little olive oil in a pan and fry the gnocchi over high heat for about 3 minutes. Turn the heat down and add spinach. When the spinach has wilted, add the cream, sun-dried tomatoes and walnuts. Serve gnocchi with a little Parmesan cheese.
Tip: You can also use ready-made gnocchi to make the recipe faster.
Tip: Parmesan cheese contains animal rennet, so this recipe is not 100% vegetarian. Replace the cheese with an old or matured cheese with vegetarian rennet or try a vegan cheese.
