Spinach stew with egg

Serve this vegetarian stew with spinach and pine nuts with a boiled egg and you have a delicious winter meal.



Optionally peel the potatoes. Bring a pan of water to the boil and cook the potatoes for 15 to 20 minutes.
Meanwhile, boil the eggs in a pan for about 6 minutes and then rinse them with cold water.
Toast the pine nuts.
Chop the onion and fry it in a wok with a little oil. Add the spinach and let it wilt a bit.
Drain the potatoes and mash finely. Add the milk, a knob of butter and a good pinch of salt and pepper. Add the fried onion and spinach and toss through the puree. Also fold in the Parmesan cheese.
Peel the eggs and serve the spinach stew with wedges of boiled egg and sprinkle with pine nuts and some more Parmesan cheese.
Tip: Parmesan cheese contains animal rennet, so this recipe is not 100% vegetarian. Replace the cheese with an old or matured cheese with vegetarian rennet or try a vegan cheese.
