Easy fresh lasagna with layers of creamy spinach, tomato and salmon slices, a delicious combination of pasta, vegetables and fish




 Heat the oven to 200 degrees. Fry the spinach in stages in a large pan until it has wilted. Cut the salmon into thin slices.

 Press as much moisture as possible from the spinach into a sieve or colander with a spoon. Place the wilted spinach in a bowl and add the ricotta and milk and mix together. Season with a generous pinch of salt, pepper and garlic.

 Grease the baking dish and spread a little (about ⅕ part) of the spinach mixture over the bottom. Place 3 to 4 lasagna sheets on this. Divide some of the spinach mixture (about ⅕ part) over this and half of the salmon slices. Cover again with lasagna sheets and spoon a little more of the spinach mixture over it and 1 tomato in slices.

 Repeat this one more time with the spinach mixture and salmon, lasagna sheets and finish with the spinach mixture with tomato slices. Sprinkle the salmon lasagna with cheese and put in the oven for about 45 minutes until cooked through.

 Tip: you can also use smoked salmon instead of fresh fillet. Then the salmon flavor comes out even better in the dish. Instead of spinach, you can also use frozen spinach (not chopped) and let it thaw and drain well.
