Super easy meal of pumpkin with goat cheese and other toppings on a crispy sheet cake of puff pastry



Preheat the oven to 210° degrees. Peel the pumpkin and cut it first into pieces and then into thin slices about 5 mm thick. Don’t make them much thicker or they won’t cook properly. Cut the onion into rings. Mix the pumpkin slices and red onion in a bowl with a spoonful of oil, a squeeze of honey, thyme, pepper and salt.
Roll out the puff pastry on a baking tray and fold the edges. Poke holes in the bottom with a fork. Crumble half of the goat cheese over the bottom and spread the pumpkin mixture on top. Then crumble the rest of the goat cheese over it and sprinkle with pumpkin seeds.
Bake the pie with pumpkin for about 25 minutes in the oven until it is nicely crispy. Before serving, garnish with some watercress or arugula and a little more olive oil.
Serve with a nice autumn salad or a cup of soup.
