Pasta all’arrabbiata

Must Try

Delicious spaghetti in a delicious slightly spicy homemade tomato sauce of roma tomatoes and chili, delicious with Parmesan cheese

Boil the spaghetti for about 10 minutes in a pan with lightly salted water. Finely chop the onion and garlic. Heat the oil in a pan and fry the garlic and onion in it. Add the tomato paste and stir through.
Cut the tomatoes into quarters and add to the pan. Stir fry for a few minutes. Season the mixture with chili pepper. If you like spicy, add a little extra.
Drain the spaghetti and reserve some of the cooking water. Toss the spaghetti through the tomato sauce. Add a little cooking liquid and stir to a smooth sauce. Let the mixture heat through for a few more minutes and season with some salt and pepper.
Garnish the pasta all’arrabbiata with fresh basil and Parmesan cheese.
Tip: also replace the spaghetti with penne or other pasta.
Parmesan cheese contains animal rennet, so this recipe is not 100% vegetarian. Replace the cheese with an old or matured cheese with vegetarian rennet or try a vegan cheese.
