Beat the eggs with the milk and a pinch of salt and pepper. Heat a little butter or oil in a pan and pour in the egg mixture for 1 omelette. Cook the omelette for 3 minutes on one side, then turn it over and cook the other side as well. Keep the omelette warm under a plate and bake the other omelet(s) as well.
Heat a little oil or butter in another pan and fry the tempeh cubes on a high heat until crispy. Remove from the pan, then add the spice paste to the pan and cook for a minute. Bake the stir-fried vegetables in this. Add the coconut milk and let the mixture simmer for a while with the lid on the pan.
Have an omelet. Spoon some of the vegetable mixture in the middle and divide some tempeh cubes over it. Fold the omelet. Spoon some peanut sauce over and garnish with fried onions and fresh coriander.
Delicious with rice and cassava prawn crackers (then the dish is no longer low in carbohydrates).
