Panzanella is an Italian bread salad, but also very tasty in the Greek way with feta and roasted peppers.

If you roast peppers yourself, you can place them in the oven under the grill at 230° degrees for about 25 minutes until they are black. Or put it on a gas burner that’s on and blaze it black. Then put them in a bowl and cover with foil or put in a bag and tie up. After 15 minutes, remove the skins and seeds. For a quick version, use jarred bell peppers.
Mix the olive oil, vinegar, oregano, salt and pepper together.
Cut the tomatoes into pieces and the cucumber into cubes. Mix these two including the seeds and liquid of the tomatoes in a bowl.
Tear the bread into pieces and mix with the vinegar-oil mixture through the vegetables.
Cut the grilled peppers into strips and add them together with the olives. Serve the Greek panzanella with some feta.
