This one-pan dish with pasta, chicken and Parmesan cheese has a nice crispy topping and is an easy recipe with little washing up.



Fry the panko in a dry frying pan for a few minutes until it starts to brown slightly. Remove the panko from the pan.
Heat a little oil in the pan and add the diced chicken along with the Italian herbs and garlic.
When the chicken is browned all over, add the stock and the sieved tomatoes and then the pasta. Simmer for 15 to 20 minutes, stirring occasionally. If the liquid starts to run out, add a little extra stock or water and/or put a lid on the pan.
When the pasta is (almost) cooked and the sauce has thickened a bit, divide the mozzarella over it and let it melt for a few minutes with the lid on the pan.
Sprinkle the chicken Parmesan pasta with Parmesan cheese, the roasted panko and fresh basil.
Delicious with a fresh salad or add mushrooms for extra vegetables.
