You can make this tasty potato tortilla with only 3 basic ingredients and it is indispensable with the tapas. Includes step by step video



Peel the potatoes and cut into thin slices or use 600 gr ready-made potato slices.
Finely chop the onion.
Heat a dash of oil in a frying pan and fry the potatoes for 12 minutes. You can also pre-cook the potato slices for a few minutes in the microwave or in a pan of water to save time, pat them dry and fry them with the onion for 5 minutes.
Add the onion for the last few minutes.
Beat the eggs in a bowl with a good pinch of salt and pepper.
Drain the potatoes if there is still a lot of oil in the pan.
Add the potatoes to the egg mixture. Pour the egg mixture back into the pan.
Place the lid on the pan and bake the potato tortilla over low heat for about 8 minutes (make sure the bottom does not burn). When all the egg has set, you can loosen it by moving the pan up and down a few times and let it slide onto a plate.
Turn the potato tortilla over in the pan and fry the other side for 5 minutes as well.
Cut the tortilla into wedges before serving.
