Ravioli with mushroom filling

Delicious freshly made vegetarian pasta with a filling of mushrooms and topped with sage butter

Ingredients :

200 gr durum flour (can be bought at a specialty store or jumbo)
2 eggs

1 cup chestnut mushrooms

Preparation:

Place the pasta flour in a bowl and make a well in the center. Add the eggs to the well and stir with a fork. Take a little flour at a time on the inside of the well until everything is mixed. Then knead the dough into a smooth ball with your hands. If the dough is still sticky, knead for a while or add a little more flour. Set the dough ball to one side covered with cling film.
Roughly chop the mushrooms and onion and fry them in a pan for 5 minutes. Sprinkle with salt and pepper. Then put everything in a food processor and chop the mushrooms finely. Mix in the cheese to make a slightly firmer mixture.
Take about 1/3 of the dough ball and knead into a ball and dust it a little with flour. Pass the ball through the largest setting of the pasta machine and repeat in a smaller and smaller setting until you have a thin sheet of pasta. Place the piece on a floured work surface and cut in half. Make piles of the mushroom mixture of about 1 tsp. Keep a few cm of space between the piles. Place the other piece of dough over the heaps and press out shapes with a ravioli tamper. Press the edges again to make sure there are no gaps.
Melt the butter in a pan and finely chop a few sage leaves. Add the sage and let it simmer for a few more minutes on low heat.
Bring a pan with plenty of water and a pinch of salt to the boil. Cook the ravioli for about 2 minutes. They are ready when they float all the way to the top. Remove them from the water with a slotted spoon. Serve them on a plate and top with the warm sage butter.
