 With the cheese slicer, slice the raw asparagus lengthwise into thin ribbons. Divide the watercress among 4 plates. Divide the asparagus ribbons over this. Tear the Parma ham into pieces and place about 1.5 slices on each plate.

 Crumble the goat cheese into pieces and divide over the salad as well. Roughly chop or break the pecans and sprinkle over the salad. Finely chop the mint and mix with the olive oil, lemon juice, pepper and salt. Drizzle this dressing over the salad. Delicious as an appetizer or side dish.
