Place the flour and cornflour in a bowl. Add the egg and cold water with a pinch of salt and stir with a whisk to form a thick paste. Dip the vegetables in one at a time and then place them in the hot oil. Fry the vegetables for about 2 to 3 minutes. Flip them over once halfway through.
Drain the tempura on a paper towel and serve on a plate or bowl with a bowl of soy sauce for dipping. Add some sesame and possibly some chili flakes for a spicy taste.
Tip: for a gluten-free variant, you can also replace the flour with cornflour. Also replace the vegetables with shrimp.
