With this simple basic recipe you can make this delicious fresh broccoli soup yourself in 20 minutes, including a handy step by step video



 Heat the oil in a soup pot. Saute the chopped shallots or onion for 2 minutes. Add the broccoli in florets and then 1 liter of water and bring to the boil. Add the vegetable stock cubes and some chives to the water and let it boil for 10 to 12 minutes.
 Puree the soup with a stick blender until smooth. Stir in about 2 tablespoons of crème frache or half of the cooking cream. Serve the broccoli soup with some extra crème frache or cooking cream and fresh chives.
 Tip: I always use 1 vegetable stock cube for 1 liter of water and then season the soup with a little salt and pepper. The broccoli soup is also delicious with some fried bacon or smoked salmon.
