Preparation

Preheat the oven to 200 degrees. Cut a piece of pumpkin of approximately 100 grams and clean it. Place the piece of pumpkin on a baking tray and put in the oven for about 40 minutes until it is soft. You can also use pumpkin cubes for this and cook them until they are soft.
Puree the pumpkin with the vanilla extract until smooth. Place the monchou with the icing sugar in a large bowl and mix with a hand mixer until smooth. Add the pumpkin puree and mix it in as well. Crush the Oreo cookies finely. You can do this using a food processor or by hand.
Add the crumbled biscuits to the bowl along with the pumpkin spice seasoning, a pinch of cinnamon and a pinch of salt. Stir well and place in the fridge for at least 1 hour. Form about 15 balls. It’s easy to do this using a spoon. Place the formed balls on a plate lined with baking paper. Place the balls back in the fridge for at least 30 minutes.
Melt the white chocolate in a bain marie. Dip the pumpkin spice balls one by one through the melted chocolate using a fork. Then put them back on the board. Repeat with all balls. Then melt the dark chocolate in another bowl and make stripes over the truffles. If desired, crumble an Oreo cookie to decorate with and sprinkle it over the truffles.
Put the truffles back in the fridge for at least 30 minutes to allow the chocolate to dry.
