Delicious Asian noodle soup recipe with green beans, mushrooms and crispy fried tempeh.

 Finely chop the ginger. Fry these in a (soup) pan in a little oil. Add the mushrooms in pieces and fry for a few minutes. Deglaze with the soy sauce and then add the stock. Then add the green beans and cook in the stock for 10 minutes.

 Meanwhile, prepare the tempeh and fry it in a pan. Finally, add the noodles to the soup and cook for another 4 minutes (or according to the package). Serve the noodle soup with cubes of tempeh, some bean sprouts, spring onion rings and some sesame.
 Tip: tempeh ketjap can be bought ready-made as fried cubes at the larger supermarkets. But you can also buy a large block yourself and cut it into pieces and let it marinate in some soy sauce and then bake.
 You can also add fried chicken, shrimp, or bacon instead of tempeh for a meat or fish variant.
