Cook the pasta according to package. Meanwhile, finely chop the onion and cloves of garlic. Fry these in a large snack or wok pan in a tablespoon of oil until translucent.
Add the salmon and fry on all sides, cut into pieces with a spatula. Then add the spinach in stages until it has wilted a bit. Pour in the cream and season with plenty of salt and pepper.
Halve the tomatoes and mix with the salmon and spinach. Heat through for a few minutes and then add the tagliatelle. Mix everything together and spoon onto plates. Sprinkle with toasted pine nuts.
