A healthier sandwich made with wholemeal bread, grilled eggplant, sun-dried tomatoes and mozzarella

 Cut the egg plant into thin slices. Brush them with a little olive oil and a pinch of salt and pepper. Grill the aubergine slices in a pan. Cut the mozzarella into slices and the sun-dried tomatoes into smaller pieces.

 Prepare the 4 slices of bread. Spread 2 of the bread slices with the mozzarella, sun-dried tomatoes, a handful of arugula and the grilled aubergine. Place the other 2 slices on top and press slightly.

 Bake the sandwiches for a few minutes in the pan or in a sandwich maker until they are golden brown and the cheese has melted.
