For the Beef Marinade

- 1 pound of flank steak

- 3 tablespoons of soy sauce

- 2 tablespoons of sriracha sauce

- 1 teaspoon of ground ginger

- 1 teaspoon of black pepper
For the Sweet Potatoes

- 2 medium sweet potatoes, peeled and diced

- 2 tablespoons of olive oil

- 1 teaspoon of smoked paprika

- 1/2 teaspoon of salt

- 2 cups of cooked brown rice or quinoa

- 1 cup of black beans, drained and rinsed

- 1 avocado, sliced

- Fresh cilantro for garnish

- Lime wedges for serving
Instructions
- Prepare the Sweet Potatoes
- Preheat the oven to 400°F (200°C).
- Peel and dice two medium sweet potatoes into 1-inch cubes.
- Toss the cubes with 1 tablespoon of olive oil, 1 teaspoon of paprika, and a pinch of salt.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes or until they are golden and tender, stirring halfway through.
- Cook the Beef
- While the sweet potatoes roast, slice 1 pound of flank steak against the grain into thin strips.
- In a bowl, mix together 2 tablespoons of soy sauce, 1 tablespoon of sriracha, and 1 teaspoon of garlic powder.
- Add the steak strips to the marinade and toss to coat. Let it marinate for at least 15 minutes.
- Heat a large skillet over medium-high heat and add 1 tablespoon of vegetable oil.
- Once the oil is hot, add the marinated steak in a single layer. Cook for 3-4 minutes without stirring, allowing a nice sear to form.
- Flip the beef and cook for an additional 2-3 minutes until it reaches desired doneness.
- Assemble the Bowl
- In a serving bowl, start with a layer of cooked brown rice or quinoa as the base.
- Top with a generous scoop of the roasted sweet potatoes and the cooked beef.
- Add ½ cup of black beans, rinsed and drained, to the bowl.
- Slice one ripe avocado and arrange it over the top.
- Finish with Fresh Toppings
- Garnish the bowl with freshly chopped cilantro and a squeeze of lime juice for brightness.
- If you like it spicy, drizzle additional sriracha on top.
- Serve and Enjoy
