Spicy Beef and Sweet Potato Bowl

Ingredients

Scale

For the Beef Marinade

    • 1 pound of flank steak

    • 3 tablespoons of soy sauce

    • 2 tablespoons of olive oil

    • 2 tablespoons of sriracha sauce

    • 1 tablespoon of honey

    • 3 cloves of garlic, minced

    • 1 teaspoon of ground ginger

    • 1 teaspoon of black pepper

For the Sweet Potatoes

    • 2 medium sweet potatoes, peeled and diced

    • 2 tablespoons of olive oil

    • 1 teaspoon of smoked paprika

    • 1/2 teaspoon of salt

    • 2 cups of cooked brown rice or quinoa

    • 1 cup of black beans, drained and rinsed

    • 1 avocado, sliced

    • Fresh cilantro for garnish

    • Lime wedges for serving

Instructions

  1. Prepare the Sweet Potatoes

  • Preheat the oven to 400°F (200°C).
  • Peel and dice two medium sweet potatoes into 1-inch cubes.
  • Toss the cubes with 1 tablespoon of olive oil, 1 teaspoon of paprika, and a pinch of salt.
  • Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 25-30 minutes or until they are golden and tender, stirring halfway through.

  1. Cook the Beef

  • While the sweet potatoes roast, slice 1 pound of flank steak against the grain into thin strips.
  • In a bowl, mix together 2 tablespoons of soy sauce, 1 tablespoon of sriracha, and 1 teaspoon of garlic powder.
  • Add the steak strips to the marinade and toss to coat. Let it marinate for at least 15 minutes.
  • Heat a large skillet over medium-high heat and add 1 tablespoon of vegetable oil.
  • Once the oil is hot, add the marinated steak in a single layer. Cook for 3-4 minutes without stirring, allowing a nice sear to form.
  • Flip the beef and cook for an additional 2-3 minutes until it reaches desired doneness.

  1. Assemble the Bowl

  • In a serving bowl, start with a layer of cooked brown rice or quinoa as the base.
  • Top with a generous scoop of the roasted sweet potatoes and the cooked beef.
  • Add ½ cup of black beans, rinsed and drained, to the bowl.
  • Slice one ripe avocado and arrange it over the top.

  1. Finish with Fresh Toppings

  • Garnish the bowl with freshly chopped cilantro and a squeeze of lime juice for brightness.
  • If you like it spicy, drizzle additional sriracha on top.

  1. Serve and Enjoy

  • Serve immediately while everything is warm and vibrant. Dive into the layers of flavors and enjoy the satisfying combination of spices and textures.
